Japanese Broth “dashi“

Join us for an engaging lecture and live demonstration exploring the art of dashi, the fundamental stock that forms the heart of Japanese cuisine. Dashi is a simple yet deeply flavorful broth made by extracting the essence of ingredients like seaweed, mushrooms, and fish—but in this session, we’ll focus on a vegan-friendly version using kombu (edible kelp) and dried shiitake mushrooms.
